Members of the legume family, soybeans and their derived ingredients contain allergenic proteins. For example, soybean sprouts, soy sauce, hydrolyzed soy protein, tofu, miso, and soy lecithin retain allergic IgE-binding activity. CROSS-REACTIVITY(交叉反应)
The assay exhibits strong reactivity to soy (Glycine max). At concentrations as high as 100,000 ppm Chick pea/garbanzo bean (0.006%), garfava flour (0.0025%), peanut (0.0017%) and lentils (0.0010%) were minimally cross-reactive. No cross-reactivity was observed in other matrices tested including a large panel of tree nuts, legumes, seeds, flours, meats and spices.

RECOVERY(回收率)
Recovery of spiked soy samples at various concentrations was efficient (>79%) when the following food matrices were assayed: chocolate, cereals, breads, and cake.
